Malthouse One was the original structure on the site, built by Stuart Brothers of Sydney and completed in August 1899. A 1969 fire gutted its interior and all internal structures were removed. Natural light now falls through high windows onto bare floor and column bases. Part of the Mittagong Maltings series.
